Veggieful Kale Pesto Spaghetti

We recently updated our backyard so we can dine outdoors as a family and it’s already one of my favorite upgrades. Alfresco dinners are officially in rotation, and I’m fully here for it. Today’s fresh recipe is directly from Hungryroot.
- Kale spinach pesto
- Baby spinach
- garlic and herb seasoning
- grape tomatoes
- organic spaghetti bionaturae
- Boil a large pot of salted water, add the whole package of pasta + cook 12 min or until al dente; set aside ¼ cup pasta water then drain + return to pot
- Meanwhile, wash + slice tomatoes in half; set aside
- Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach with salt/pep/seasoning packet 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted; add tomatoes, pouch of pesto, ¼ cup pasta water + cook 2-3 min more
- Add spinach to pasta, mix thoroughly + divide between plates—delish!
