My husband and I recently introduced the girls to the classic Star Wars films, and it’s become something they look forward to watching with us. With this new hobby comes the ever-increasing movie popcorn consumption. After going through multiple bags in such a short time, I decided to make a healthier alternative that we could all enjoy in droves. It took a few tries to get it right, but the girls ended up loving this recipe so much that it’s become part of our routine.
I added a tablespoon of coconut oil with three tablespoons of popcorn kernels to a small pot, keeping the lid slightly skewed while cooking on medium until all of the popping stopped. While cooking, I added in a tbsp of rosemary, a pinch of lemon zest, a tsp of lavender flowers, and a tsp of black pepper. I garnished with fresh rosemary from our garden and lavender flowers for added flavor and texture. It’s a subtle snack that’s both refreshing and fulfilling.
