Dinner

Dinner has always been a steady part of our day. Not because it’s perfectly planned, but because it brings everyone into the same space, doing something side by side. Cooking becomes conversation. Setting the table becomes a way to slow down. If we take time to pause, dinner can be a moment of connection that we might have otherwise missed. I shared the recipe we followed from this night if you’re looking for something new to try this week.

 

Ingredients

  • 1/4 cup Chili powder
  • 1/4 cup Paprika
  • 2 tbsp Kosher salt
  • 2 tbsp Ground coriander
  • 2 tbsp Garlic powder
  • 2 tbsp Brown sugar
  • 2 tbsp Ground mustard
  • 1 1/4 tbsp Ground black pepper
  • 1 tsp Cayenne pepper seasoning
  • 1 tbsp Ground black pepper
  • 1 tbsp Ground cumin
  • 1 lb Salmon fillet
  • 2 tbsp Avocado oil

 

Instructions

  1. Assemble spice rub and coat salmon with a liberal amount. Set aside for 10 minutes. NOTE: Seal leftover rub in a bag or container and use it over and over. Good for 6 months.
  2. Preheat grill to 350ºF or medium heat. Spray or wipe grill liberally with avocado oil (keeps fish from sticking).
  3. Grill salmon 3 to 4 minutes per side or until internal temperature reaches 140ºF. Serve with sweet potato fries or dirty rice
